Cauliflower Hummus

Prep Notes


1 head garlic, top sliced off to expose cut garlic cloves
Extra virgin olive oil
1 head cauliflower, cut into florets
1 tablespoon tahini
1 tablespoon fresh lemon juice
1 tablespoon raw honey
1 teaspoon sea salt


• Preheat oven to 375° & drizzle garlic gloves with a little olive oil, wrap in aluminum foil
• Toss cauliflower with 1 tablespoon olive oil, season generously with sea salt
• Roast cauliflower until very tender & golden
• Roast garlic until the cloves are very soft
• Add cauliflower & roasted garlic cloves to a food processor along with tahini, lemonjuice, honey & 1 tablespoon olive oil & process until very smooth
• Add more olive oil, if needed, for a smooth consistency
• Adjust taste with additional salt & lemon juice if necessary
