Pumpkin Pie Quinoa

Ingredients

1 c quinoa, rinsed


2 c water

1 can pumpkin puree


½  tsp ground cinnamon

Directions

·        add all ingredients to a sauce pan

·        bring to a boil


·        lower heat & cook for 10-15 minutes

Notes

variations

·        replace water with coconut or almond milk


·        add vanilla or almond extract while cooking

·        add orange peel while cooking
& remove before serving

·        replace pumpkin with sweet potato, butternut squash puree  or applesauce

 

serving suggestions

·        add maple syrup to taste
if you must sweeten

·        add grated unsweetened coconut, chopped raw nuts and/or dried fruit


·        serve witha dollop of unsweetened yogurt for additional protein
