Pumpkin Spice Blender Muffins


Yields

approximately 22 regular muffins or 44 minis

Ingredients

  • 2 ripe bananas, mashed well
  • 2 eggs, beaten
  • 2 tablespoons honey
  • 1 cup full fat or 2% plain Greek yogurt
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups rolled oats
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • coconut oil or butter for greasing pans

Directions

  • Preheat oven to 350° & generously coat muffin tins with coconut oil or butter
  • In a bowl add mashed bananas, beaten eggs, honey, yogurt & vanilla & and mix well
  • In a blender add oats, baking powder, baking soda, salt & spices & blend until finely ground
  • Pour dry ingredients into the bowl with wet ingredients & mix well
  • Spoon batter into muffin tins
  • Bake large muffins 8-10 minutes & mini muffins 6-8 minutes
  • Remove and cool on a wire rack
