Rainbow Slaw


Ingredients

  • 4 carrots, shredded by hand or food processor
  • 3 beets, try a variety: red, yellow, candy stripe, shredded by hand or food processor
  • 2 tablespoons chopped fresh herbs, such as parsley, mint, basil, cilantro

Ginger Scallion Dressing

  • 1/2 cup scallions, white & green parts, finely sliced (about 3 scallions)
  • 2 tablespoons fresh ginger, minced
  • 1/2 cup unrefined sesame oil
  • 1/4 cup tamari soy sauce
  • 1/2 cup unseasoned rice vinegar
  • 3 tablespoons honey
  • 1 teaspoons sriracha (optional)

Directions

  • Prepare the dressing by whisking all the ingredients together
  • Toss the carrots & beets with the dressing separately; red beets “bleed”
  • Gently combine the vegetables & sprinkle with fresh herbs
