Preheat oven to 375° & drizzle garlic gloves with a little olive oil, wrap in aluminum foil
Toss cauliflower with 1 tablespoon olive oil, season generously with sea salt
Roast cauliflower until very tender & golden
Roast garlic until the cloves are very soft
Add cauliflower & roasted garlic cloves to a food processor along with tahini, lemon juice, honey & 1 tablespoon olive oil & process until very smooth
Add more olive oil, if needed, for a smooth consistency
Adjust taste with additional salt & lemon juice if necessary
