Minty Coconut Pea Soup

Ingredients

small onion
chopped

tbsp
coconut oil
1
bag frozen peas
defrosted
1
cup
fresh mint leaves
1/2
cup
full fat coconut milk
2
cups
water
Sea salt
Unsweetened coconut flakes
optional
Instructions
In a pan add chopped onions & a sprinkle of sea salt
Sauté chopped onions until very soft
Put onions, peas, mint, coconut milk & water in a blender & blend until very smooth
Add additional water or coconut milk if necessary
Notes
Garnish with fresh mint leaves & coconut flakes.
