Pumpkin Pie Quinoa

Ingredients

  • 1 c quinoa rinsed
  • 2 c water
  • 1 can pumpkin puree
  • ½ tsp ground cinnamon

Instructions

  • · Add all ingredients to a sauce pan
  • · Bring to a boil
  • · Lower heat & cook for 10-15 minutes

Variations

  • · Replace water with coconut or almond milk
  • · Add vanilla or almond extract while cooking
  • · Add orange peel while cooking
& remove before serving
  • · Replace pumpkin with sweet potato, butternut squash puree or applesauce

Serving suggestions

  • · Add maple syrup to taste
if you must sweeten
  • · Add grated unsweetened coconut, chopped raw nuts and/or dried fruit
  • · Serve witha dollop of unsweetened yogurt for additional protein
