shredded by hand or food processor

beets
try a variety: red, yellow, candy stripe, shredded by hand or food processor

such as parsley, mint, basil, cilantro
Ginger Scallion Dressing

scallions
white & green parts, finely sliced (about 3 scallions)

fresh ginger
minced

unrefined sesame oil

tamari soy sauce
1/2
cup
unseasoned rice vinegar

honey

Instructions
Prepare the dressing by whisking all the ingredients together
Toss the carrots & beets with the dressing separately; red beets “bleed”
Gently combine the vegetables & sprinkle with fresh herbs
