Banana Granola Pancakes


8 large pancakes


1 large ripe banana
2 eggs
1/4 tsp. pure vanilla extract
1/4 tsp. high quality salt such as Redmonds Real Salt
Extra virgin, cold pressed coconut oil for the pan
Granola, look for low sugar, gluten free store bought or try Thrive Naturally DIY Granola


• In a bowl, mash banana until very smooth
• In a separate bowl, whisk eggs with vanilla extract & salt
• Add eggs to mashed banana & combine well
• Warm pan on medium heat, coat with coconut oil & heat until shimmering
• Add 1 1/2 tbsp. of batter to pan, & let cook until the sides are beginning to set
• Sprinkle 1 tsp. granola on pancake and cook until bottom is golden
• Flip pancake & cook until the other side is golden


• Serve with raspberry sauce or maple syrup or fresh fruit
• Note that the pancakes will be almost crepe like, but not as thin
