Banana Granola Pancakes
Ingredients
- 1 large ripe banana
- 2 eggs
- 1/4 tsp pure vanilla extract
- 1/4 tsp high quality salt such as Redmonds Real Salt
- Extra virgin cold pressed coconut oil for the pan
- Granola look for low sugar, gluten free store bought or try Thrive Naturally DIY Granola
Instructions
- In a bowl, mash banana until very smooth
- In a separate bowl, whisk eggs with vanilla extract & salt
- Add eggs to mashed banana & combine well
- Warm pan on medium heat, coat with coconut oil & heat until shimmering
- Add 1 1/2 tbsp. of batter to pan, & let cook until the sides are beginning to set
- Sprinkle 1 tsp. granola on pancake and cook until bottom is golden
- Flip pancake & cook until the other side is golden
Notes
• Serve with raspberry sauce or maple syrup or fresh fruit
• Note that the pancakes will be almost crepe-like, but not as thin
