Banana Granola Pancakes

  • 1 large ripe banana
  • 2 eggs
  • 1/4 tsp pure vanilla extract
  • 1/4 tsp high quality salt such as Redmonds Real Salt
  • Extra virgin cold pressed coconut oil for the pan
  • Granola look for low sugar, gluten free store bought or try Thrive Naturally DIY Granola


  • In a bowl, mash banana until very smooth
  • In a separate bowl, whisk eggs with vanilla extract & salt
  • Add eggs to mashed banana & combine well
  • Warm pan on medium heat, coat with coconut oil & heat until shimmering
  • Add 1 1/2 tbsp. of batter to pan, & let cook until the sides are beginning to set
  • Sprinkle 1 tsp. granola on pancake and cook until bottom is golden
  • Flip pancake & cook until the other side is golden


• Serve with raspberry sauce or maple syrup or fresh fruit
• Note that the pancakes will be almost crepe-like, but not as thin
