Cauliflower Hummus
Cauliflower Hummus

Ingredients
- 1 head garlic top sliced off to expose cut garlic cloves
- extra virgin olive oil
- 1 head cauliflower cut into florets
- 1 tbsp tahini
- 1 tbsp fresh lemon juice
- 1 tbsp raw honey
- 1 tsp sea salt
Instructions
- Preheat oven to 375° & drizzle garlic gloves with a little olive oil, wrap in aluminum foil
- Toss cauliflower with 1 tablespoon olive oil, season generously with sea salt
- Roast cauliflower until very tender & golden
- Roast garlic until the cloves are very soft
- Add cauliflower & roasted garlic cloves to a food processor along with tahini, lemon juice, honey & 1 tablespoon olive oil & process until very smooth
- Add more olive oil, if needed, for a smooth consistency
- Adjust taste with additional salt & lemon juice if necessary
