Cauliflower Hummus

  • 1 head garlic top sliced off to expose cut garlic cloves
  • extra virgin olive oil
  • 1 head cauliflower cut into florets
  • 1 tbsp tahini
  • 1 tbsp fresh lemon juice
  • 1 tbsp raw honey
  • 1 tsp sea salt


  • Preheat oven to 375° & drizzle garlic gloves with a little olive oil, wrap in aluminum foil
  • Toss cauliflower with 1 tablespoon olive oil, season generously with sea salt
  • Roast cauliflower until very tender & golden
  • Roast garlic until the cloves are very soft
  • Add cauliflower & roasted garlic cloves to a food processor along with tahini, lemon juice, honey & 1 tablespoon olive oil & process until very smooth
  • Add more olive oil, if needed, for a smooth consistency
  • Adjust taste with additional salt & lemon juice if necessary
