Minty Coconut Pea Soup

  • 1 small onion chopped
  • 2 tbsp coconut oil
  • 1 bag frozen peas defrosted
  • 1 cup fresh mint leaves
  • 1/2 cup full fat coconut milk
  • 2 cups water
  • Sea salt
  • Unsweetened coconut flakes optional


  • In a pan add chopped onions & a sprinkle of sea salt
  • Sauté chopped onions until very soft
  • Put onions, peas, mint, coconut milk & water in a blender & blend until very smooth
  • Add additional water or coconut milk if necessary


Garnish with fresh mint leaves & coconut flakes.
