Rainbow Slaw

Ingredients
- 4 carrots shredded by hand or food processor
- 3 beets try a variety: red, yellow, candy stripe, shredded by hand or food processor
- 2 tbsp chopped fresh herbs such as parsley, mint, basil, cilantro
Ginger Scallion Dressing
- 1/2 cup scallions white & green parts, finely sliced (about 3 scallions)
- 2 tbsp fresh ginger minced
- 1/2 cup unrefined sesame oil
- 1/4 cup tamari soy sauce
- 1/2 cup unseasoned rice vinegar
- 3 tbsp honey
- 1 tsp sriracha optional
Instructions
- Prepare the dressing by whisking all the ingredients together
- Toss the carrots & beets with the dressing separately; red beets “bleed”
- Gently combine the vegetables & sprinkle with fresh herbs
