Zucchini Rice
Zucchini Rice
Servings 1 person
Ingredients
- 1 green zucchini
- 1 yellow squash
- 1 tsp sea salt
- 1 tbsp extra virgin olive oil
- 1 small onion finely chopped
- 1 garlic clove finely chopped
- 1 tbsp parmesan cheese grated (optional)
- Sea salt & freshly ground black pepper
Instructions
- Trim ends of zucchini & squash & grate on a box grater, using side with large holes
- Place grated zucchini in a kitchen towel & squeeze to release liquid
- In a bowl toss the zucchini with 1 teaspoon salt & transfer to a strainer for 15 minutes,pressing occasionally to release more liquid
- Heat olive oil over medium heat in a pan, add onion & sauté until translucent
- Add the garlic & cook until fragrant, 1 to 2 minutes
- Add the grated zucchini, stir to combine & cook for a few minutes
- Add 1 tablespoon parmesan cheese (if using).
- Finish with fresh ground black pepper if desired
